Gluten-Free Zucchini Fritters

Still looking for creative ways to use up all that garden zucchini?? These gluten-free zucchini fritters are super tasty and versatile. The first time I made these they were gobbled up for breakfast and then requested again for dinner 🙂 Thanks cousin Sally for the idea 🙂

Ingredients:

  • 3 cups shredded zucchini
  • 2 large eggs
  • 1/4 cup Mama’s coconut blend gluten-free flour
  • 1/4 tsp xanthan gum
  • 2 cloves garlic or 2 tsp dried minced garlic

Directions:

  1. Sprinkle salt over the shredded zucchini. Place it in a colander over another bowl or in the sink. Mix the salt in then let sit for 20+ minutes to drain. Press liquid out of the zucchini one last time.
  2. Mix the drained zucchini and remaining ingredients together, it will form a batter-like consistency.
  3. Scoop batter into a large frying pan with a light layer of olive oil. Fry over medium high heat for several minutes or until lightly browned on each side.
  4. Enjoy with a variety of toppings: ketchup, gluten-free soy sauce, sriracha, hot sauce, ranch…the possibilities are endless!
I like to peel a bit of the skin off the zucchini first
