Ginger Cookies

These Ginger Cookies are the perfect texture… soft, chewy and NOT crumbly at all! The best part is they are also gluten-free!!! Yay! My son’s girlfriend brought these over the other day and oh my goodness! We devoured them! That’s saying a lot too because my family typically prefers chocolate chip cookies to most other deserts but I think we have a tie with these ginger cookies!!! She even brought me some extra batter which we quickly cooked up. Of course she also gave me the recipe and we’ve already made more 🙂 Seriously need to stop eating so many cookies but they are so delicious!! I just love how soft and chewy they are!!

Ingredients:

Directions:

  1. In a large mixing bowl mix the shortening and sugar, then add the egg and combine.
  2. Mix together the dry ingredients (flour, xanthan gum, baking soda, cloves, cinnamon, & salt) then mix them in with the egg mixture.
  3. Lastly, add the molasses to the mixture and combine.
  4. Scoop into balls then roll in sugar before placing on an ungreased cookie sheet. I lined mine with parchment paper.
  5. Bake at 350* for 9 to 10 minutes. Allow to cool completely and enjoy!

Tip: using a cookie scoop will make the perfect balls!
