This gluten-free BBQ Stir-Fry blew my socks off!! Stir-fry is so fun because you can literally do anything you want with it! You can use whatever veggies you have in the fridge and you can use whatever sauces you have in the fridge!! How perfect is that?!? It’s the best way to clean out your fridge and make a quick and easy meal all at the same time!!
Our fridge was getting pretty packed with open sauce bottles, my mother-in law made some delicious pulled pork for us in her new smoker the other day. We added Kinder’s Organic Mild BBQ Sauce for the perfect pulled pork sandwiches, yum!! Unfortunately my husband didn’t realize we already had some open bottles of BBQ sauce in the fridge from the BBQ Chicken we had a few days earlier, so he opened another one. For some reason I had never thought about using BBQ sauce in my stir-fry before, but let me tell you, it was delicious!!! Wow!
This BBQ Stir-Fry is super quick and easy, it makes a great last-minute meal! I used one of those pre-pulled rotisserie chicken packs from Costco and chopped up the veggies I had in my fridge. Believe it or not, I still have some garden zucchini left over from this summer so I threw that in!! We also had some left over pineapple from a pizza we made earlier in the week. I guess this could be called “Clean out the fridge stir-fry” 🙂 but whatever you decide to call it, it’s delicious!
Ingredients:
- 1 large zucchini, shaved with a peeler, then chopped into smaller pieces
- garlic salt
- 3 bell peppers, diced (we like to use red, yellow & orange for flavor and fun colors!)
- 2 cloves garlic, minced
- 2 tomatoes, diced
- 1 cup pineapple, cubed
- 1 bunch green onions, diced
- 2 lbs rotisserie chicken, chopped
- 3/4 cup Kinder’s BBQ sauce
Directions:
- Stir-fry the zucchini with water instead of oil, it will cook just as well and leaves out the extra calories. Sprinkle a little garlic salt over the zucchini while stir-frying. Remove from heat when it begins to be translucent and set aside.
- Stir-fry the bell peppers and garlic for a few minutes then add the tomatoes and pineapple and stir-fry a couple more minutes. Remove from heat and set aside.
- Stir fry the chicken with the green onions till warmed through. Then add the other veggies back in and stir fry for an additional minute or two to combine flavors. Toss in some BBQ sauce to taste. Serve with rice and enjoy 😘
TIP: My kids get tired of zucchini after the summer garden overload of a really easy to grow squash! I’ve decided the best way to hide it and get them to eat it without them really even knowing is by shaving it! Simply take the peeler and just keep on peeling. Then I chop it up a little bit more to make it into even smaller pieces… it fits right into any meal and they can’t even taste it or recognize the texture of it 💪
