Jalapeno Poppers

WARNING: These Jalapeno Poppers will literally disappear if you don’t watch them closely! The first time I made these jalapeno poppers little hands were removing them from the platter before I could fill it and take it outside, so I didn’t even get a picture that time! This time I guarded them with my life to get a picture but then I made the mistake of walking out of the room for a few minutes and they were gone by the time I got back! Luckily I ate a couple right out of the oven so I can attest to their deliciousness!

Preheat oven to 400* F

Ingredients:

  • 1/2 cup cream cheese
  • 1/2 cup shredded sharp Cheddar Cheese
  • 12 jalapenos, halved lengthwise, seeds and membranes removed
  • 12 slices bacon, cut in half

Directions:

  1. Preheat oven to 400*F. Line a baking sheet with aluminum foil.
  2. Mix cream cheese and cheddar cheese together in a bowl until evenly blended.
  3. Fill each jalapeno half with cheese mixture.
  4. Wrap stuffed jalapenos with bacon and arrange on prepared baking sheet.
  5. Bake at 400* until bacon is crispy, about 15 minutes

Tip #1: if you like your bacon extra crispy pre-cook it a bit before wrapping the jalapenos.

Tip #2: be careful when you are removing the seeds and membranes from the jalapenos! Whatever you do, if you wear contacts do NOT allow the finger that takes the contact our of your eye to come into contact with any part of the jalapeno insides!! Some people are super sensitive and can’t even touch the insides because it will burn their skin! If this is you, you should try a jalapeno pepper corer, they work great!!
