These Ginger Cookies are the perfect texture… soft, chewy and NOT crumbly at all! The best part is they are also gluten-free!!! Yay! My son’s girlfriend brought these over the other day and oh my goodness! We devoured them! That’s saying a lot too because my family typically prefers chocolate chip cookies to most other deserts but I think we have a tie with these ginger cookies!!! She even brought me some extra batter which we quickly cooked up. Of course she also gave me the recipe and we’ve already made more 🙂 Seriously need to stop eating so many cookies but they are so delicious!! I just love how soft and chewy they are!!
Ingredients:
- 3/4 cup shortening
- 1 1/4 cup sugar
- 1 egg
- 2 cups gluten-free flour
- 1/2 tsp xanthan gum (omit if using all purpose flour)
- 2 tsp baking soda
- 1/2 tsp cloves
- 1 1/2 tsp cinnamon
- 3/4 tsp salt
- 1/4 cup molasses
Directions:
- In a large mixing bowl mix the shortening and sugar, then add the egg and combine.
- Mix together the dry ingredients (flour, xanthan gum, baking soda, cloves, cinnamon, & salt) then mix them in with the egg mixture.
- Lastly, add the molasses to the mixture and combine.
- Scoop into balls then roll in sugar before placing on an ungreased cookie sheet. I lined mine with parchment paper.
- Bake at 350* for 9 to 10 minutes. Allow to cool completely and enjoy!
Tip: using a cookie scoop will make the perfect balls!
