Why have we been eating so much gluten-free French Toast lately?? Well, when gluten-free bread goes on sale we just might tend to go a little crazy! A few weeks ago Fred Meyer had Franz gluten-free bread on sale for $1.50 off EACH loaf. My husband was doing the shopping that day and called to see how many I wanted. We haven’t been eating as much gluten-free bread lately, I’ve stopped making sandwiches for my boys since COVID cancelled in-person school last March. Lately though, my son and his girlfriend have been enjoying avocado toast so we have noticed an uptick in our bread consumption. I asked my husband to check the date on the bread, it was about a month out, so I told him to grab 7 or 8 loaves. That being said, I never know what he’ll actually come home with… this time he decided to put the whole rack in the cart!! He came home with over 25 loaves of gluten-free bread!
No longer feeling the need to be stingy with our bread we suddenly have a new found passion for gluten-free French Toast! This might sound silly to non-gfers but seriously, we typically consume our bread in a cautious and planned out manner. Gluten-free bread generally has a shorter shelf life not to mention the loaves are half the size & 4 times the cost of a regular loaf of bread. Luckily Franz GF bread is vacuum sealed which means I didn’t have to put all those loaves in the freezer, thank goodness!! Anyway, on to the recipe, we hope you enjoy this classic, deliciously moist and easy gluten-free French Toast as much as we do!
Ingredients:
- 6 thick slices gluten-free bread
- 2/3 cup milk
- 2 eggs
- 1/4 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1 tsp vanilla extract
- salt to taste
Directions:
- Mix all ingredients with a whisk or fork.
- Heat a lightly oiled griddle to 375* or a skillet over medium-high heat.
- Pour into a shallow casserole dish. Place bread in a single layer and let soak for several minutes each side.
- Once the bread is thoroughly saturated, place on griddle or pan and cook both sides until golden brown, roughly 1-2 minutes each side.
- Top with berries and maple syrup and enjoy!
