This gluten-free instant pot BBQ chicken is great on a toasted gluten-free bun with a side kick of corn, roasted potatoes, coleslaw and more! It’s also delicious in a BBQ Chicken salad with lettuce, black beans, corn, diced tomatoes, sliced avocados and ranch!
Ingredients
- 1 cup chicken stock or water
- 2 lbs rotisserie chicken
- 1 teaspoon garlic powder
- 1/2 teaspoon paprika
- 1/2 teaspoon salt
- 1 1/2 cups BBQ sauce (Kinder’s Organic is gluten-free)
- 2 1/2 tablespoons brown sugar
- 2 teaspoons Worcestershire sauce (Lea & Perrins Original is gluten-free)
Directions:
- Place ingredients in the instant pot in the order listed above. Sprinkle the spices and sauces evenly over the chicken. Do NOT STIR!
- Place the lid on the instant pot with value in sealed position. Press manual, high pressure, for 15 minutes. Let the pressure naturally release for 10 minutes. Shred and enjoy!
Tip: Not all Worcestershire or BBQ sauce is gluten free!! Be sure the cheek the back of the bottle or use those suggested above.
