My husband has been begging for these power packed peanut butter balls for as long as I can remember! My mother-in-law started making these for her boys when they were recommended for snack time in pre-school. The boys helped make them and they loved them so much that they still ask for them all the time!!
These power packed peanut butter balls are not only healthy and delicious, but they are super quick and easy to make too!! Perfect to take on a hike or even a mid-day snack to get you through that long work day!
Ingredients:
- 1 cup peanut butter
- 1/2 cup non-fat dry milk powder
- 1/2 cup raisins (or chocolate chips)
- 1/4 cup honey
- 1/4 cup coconut flakes
- 1 Tbsp cacao, carob powder, or protein powder (optional)
Directions:
- Mix all ingredients then form into 1 inch balls. (Add honey to taste and more powdered milk for consistency if desired)
- Roll balls in your choice of toppings. We like to make several different varieties. You can roll these power balls in just about any nuts, seeds, powders, dried fruits or candies! See below for our favorite toppings.
Topping Suggestions:
- Coconut flakes (my husband’s favorite!)
- Toasted sesame seeds
- Toasted sunflower seeds
- Cacao powder
- Carob powder
- Toasted hemp seeds
Get the kids involved and let them get their hands dirty (wash them first of course :-)) Add some raisins or chocolate chips to the tops to turn them into eyeballs for Halloween! Have fun and get creative!
