Zucchini Pizza Bites

Are you still looking for ways to use up all those zucchini? These little zucchini pizza bites are super fun & EASY to make and actually taste REALLY good!! Even my non-veggie-eater ate some and liked them!! 🙂 Everyone can customize their own mini pizzas and you can easily eat more than one without feeling guilty!

If you have overgrown zucchini this is the perfect way to use them up! Use the solid ends for the pizzas. The middle section, where the seeds were, will not be a solid circle so won’t work for pizzas but it can definitely be shredded and used for zucchini bread!

Zucchini pizza bites can make up a complete and delicious dinner or they can be a fun appetizer. I took some to a friend so she could try one to see what she thought. Her son came downstairs as I was visiting and she told him to try one. Later she told me he tried one out of pure politeness but they looked way too healthy. He actually really liked them and couldn’t believe how delicious they were 🙂

Preheat oven to 425*

Ingredients:

  • Zucchini, sliced
  • Pizza Squeeze
  • Your Favorite Pizza Toppings – click here for more ideas
    • shredded mozzarella
    • gluten-free pepperoni
    • fresh basil
    • tomato slices

Directions:

  1. Slice zucchini into rounds, about 1/4 inch thick. Prep any other ingredients you may want to include like tomato, olives or pineapple.
  2. Spread the zucchini rounds out on a pizza tray or cookie sheet. Squeeze enough sauce onto each round to cover with a thin layer.
  3. Add mozzarella, pepperoni, basil, and tomato then top with more mozzarella.
  4. Bake at 425* for 13 minutes. Let cool a few minutes before enjoying!
