New Cascadia Traditional is a dedicated gluten free bakery located in Portland, OR. The restaurant specializes in hand crafted artisan breads, pastries, cakes, pies and cookies. They verify and source ingredients to ensure they are safe for those with Celiac Disease or gluten intolerant. Precautions are also taken to eliminate cross-contamination with other ingredients present at this facility: eggs, milk, coconut, soy, peanuts, and tree nuts.

Their gluten-free bakery also serves a rotating lunch menu, including their famous gluten-free pizzas and salads. Lunch is served Monday-Saturday, from 11am-2pm. After lunch hours, their bakery remains open from 2pm until closing, offering bread, pastry, and coffee items.
