I’ll admit, I never made homemade Spanish rice before I went gluten-free. I had always made it from a box or mix from the store. It’s was so good with our Mexican food! I haven’t been able to find a gluten-free mix available in regular stores, I’m sure there’s some out there but now I don’t need it! Thanks to Aunt Liz we now have a supper yummy and super easy recipe for homemade gluten-free Spanish rice!!
Ingredients:
- 6 Tablespoons vegetable oil
- 1 diced white onion
- 2 1/2 cups white rice
- 1 teaspoon ground cumin
- 2 teaspoons garlic salt
- 4 cups chicken stock
- 1 cup tomato sauce
- 1 diced tomato
Instructions:
- Heat the vegetable oil and saute the onion on high heat.
- Add the rice, cumin & garlic salt, stirring frequently until rice is browned, 10-12 minutes.
- Pour chicken stock, tomato sauce, and diced tomato into your rice cooker or Instant Pot. Add rice mixture when browned.
- Start rice cooker or Instant Pot on rice setting. When it’s done let the steam out and stir the rice, it will still be pretty soggy at this point.
- Close the lid and let stand for additional 10 minutes on Keep Warm setting.
- Stir rice and enjoy!
