Gluten-Free Spanish Rice

I’ll admit, I never made homemade Spanish rice before I went gluten-free. I had always made it from a box or mix from the store. It’s was so good with our Mexican food! I haven’t been able to find a gluten-free mix available in regular stores, I’m sure there’s some out there but now I don’t need it! Thanks to Aunt Liz we now have a supper yummy and super easy recipe for homemade gluten-free Spanish rice!!

Ingredients:

  • 6 Tablespoons vegetable oil
  • 1 diced white onion
  • 2 1/2 cups white rice
  • 1 teaspoon ground cumin
  • 2 teaspoons garlic salt
  • 4 cups chicken stock
  • 1 cup tomato sauce
  • 1 diced tomato

Instructions:

  1. Heat the vegetable oil and saute the onion on high heat.
  2. Add the rice, cumin & garlic salt, stirring frequently until rice is browned, 10-12 minutes.
  3. Pour chicken stock, tomato sauce, and diced tomato into your rice cooker or Instant Pot. Add rice mixture when browned.
  4. Start rice cooker or Instant Pot on rice setting. When it’s done let the steam out and stir the rice, it will still be pretty soggy at this point.
  5. Close the lid and let stand for additional 10 minutes on Keep Warm setting.
  6. Stir rice and enjoy!
