This delicious sauce can be used over your grilled chicken but really can be used in unlimited ways!! It makes a delicious salad dressing! Delicious over your fresh grilled veggies!! The possibilities are endless! Hope you enjoy these Thai-Style grilled chicken thighs as much as we do!
Ingredients: serves 4
- 1/3 cup white vinegar
- 1/3 cup sugar
- 1/4 tsp red pepper flakes
- 1/2 cup chopped fresh cilantro
- 2 Tbsp fish sauce (or sub 2 minced anchovy fillets & 2 Tbsp GF soy sauce)
- 1 Tbsp grated fresh ginger
- 3 garlic cloves, minced
- 8 boneless, skinless chicken thighs (about 1 1/2 lbs)
- Salt & pepper
Directions:
- Heat vinegar, sugar, and pepper flakes in small saucepan over medium-high heat until sugar dissolves, about 1 minute. Off heat, stir in cilantro, fish sauce, ginger, and garlic.
- Grill chicken thighs on your BBQ, sprinkle with salt and pepper and turn those thighs CONSTANTLY until cooked through.
- Drizzle Thai mixture over chicken thighs and serve over sticky rice. Enjoy!
Ok…I sill need to add a picture and maybe a few more tips and tricks here but I gotta get this posted! It’s been a HOT minute since I’ve posted anything! I was wanting to make this recipe for a family BBQ tomorrow and realized I hadn’t added this to my site yet.
