Gluten-free waffles can be delicious AND fun! The key is using the right gluten-free flours and your choice of fun waffle iron shapes. We love our Snoopy waffle iron the best but the good ‘ol fashioned waffle iron makes amazing gluten-free waffles too! As I always say, get creative and have fun with your food 🙂
Pre-heat waffle irons while you mix up your batter.
Ingredients:
- 2 1/2 cups Mama’s Coconut Blend (or other gluten-free flour)
- 1/4 teaspoon xanthan gum
- 1 Tablespoon sugar
- 5 teaspoons baking powder
- 1/2 teaspoon salt
- 2 large eggs
- 1 3/4 cups milk
- 7 Tablespoons vegetable oil
- 1 Tablespoon vanilla extract
- 1 Tablespoon almond extract
Directions:
- Mix dry ingredients together in separate bag or bowl.
- Separate the egg whites into a small bowl and beat with an electric mixer until the whites are stiff.
- In a medium bowl blend the egg yolks, milk, oil and extracts then add in the dry ingredients and mix just until smooth.
- Gently fold egg whites into your batter.
- Pour scant 2/3 cup batter onto center of hot waffle iron. Close lid and bake for about 5 minutes or until steaming stops.
- Carefully remove waffles and serve immediately. Top with fresh berries.
