Xanthan Gum is the key to using gluten-free flour! Some would rather use all purpose flours that they don’t have to think about but with xanthan gum you can tailor your recipe to the exact texture and consistency you are trying to achieve!

Sometimes you have to play with it a little but here is the basic rule on how much xanthan gum to use per cup of gluten-free flour:

Pancakes: 1/4 tsp * Cookies: 1 tsp * Breads: 1 1/2 – 2 tsp * Cakes: 1 tsp

Bob’s Red Mill has a wonderful resealable bag which is very important for xantham gum otherwise it will get everywhere! I keep it in the freezer for extended freshness!
