Thai-Style Grilled Chicken Thighs

This delicious sauce can be used over your grilled chicken but really can be used in unlimited ways!! It makes a delicious salad dressing! Delicious over your fresh grilled veggies!! The possibilities are endless! Hope you enjoy these Thai-Style grilled chicken thighs as much as we do!

Thai-Style Grilled Chicken Thighs

Ingredients: serves 4

  • 1/3 cup white vinegar
  • 1/3 cup sugar
  • 1/4 tsp red pepper flakes
  • 1/2 cup chopped fresh cilantro
  • 2 Tbsp fish sauce (or sub 2 minced anchovy fillets & 2 Tbsp GF soy sauce)
  • 1 Tbsp grated fresh ginger
  • 3 garlic cloves, minced
  • 8 boneless, skinless chicken thighs (about 1 1/2 lbs)
  • Salt & pepper

Directions:

  1. Heat vinegar, sugar, and pepper flakes in small saucepan over medium-high heat until sugar dissolves, about 1 minute. Off heat, stir in cilantro, fish sauce, ginger, and garlic.
  2. Grill chicken thighs on your BBQ, sprinkle with salt and pepper and turn those thighs CONSTANTLY until cooked through, roughly 8-10 minutes.
  3. Drizzle Thai mixture over chicken thighs and serve over sticky rice. Enjoy!

Finally got a picture of my Thai-Style Grilled Chicken thighs! I usually make at least 3 times this amount, we have some big eaters at our house. Plus, any left over sauce can be saved for left over chicken later, or can even be used as a delicious salad dressing! During the summer months I usually have a jar of this in my fridge to add a quick kick to our chicken or salads during the week. Happy gluten-free eats my friends!
